The Fried Rice is whatever is in the refrigerator. If I have a frozen bag of vegetables like peas, and carrots I'll add it to the rice. I was so happy when I went in the kitchen. I started thinking about what I wanted to put in the rice, and I came up with this.
Ingredients
1 cup of Basmati rice
1/2 red bell pepper
1/2 green bell pepper
1 cup of Julian sliced carrots(about 2-3 medium sized carrots)
1/2 Tbsp. of ginger
1/2 Tbsp. of garlic
3 eggs(scrambled) (optional)
2 stalks green onions
2 red tomatoes
2 cups of water
Soy sauce
Note: This recipe makes a lot. You will need a large pot or wok.
Directions
Put 1 cup of rice and 2 cups of water in a medium sized pot, and put on medium heat. Once rice reaches a boil turn on low and put lid over rice. 2-3 minutes later turn heat off and let rice puff up. In a skillet put some olive oil or butter and add in eggs and scramble them. When they are done put in a bowl, and set them aside. Before I started the fried rice I chopped the vegetables up and placed them on a plate. Chop the green and red bell peppers and put on plate. Chop the carrots in Julian strips and put on plate. Next chop the green onions and tomatoes and place them on the plate. The last thing to chop is the garlic and ginger. Turn skillet or wok on and put enough oil in two salted all the vegetables. Once oil is hot enough put the garlic and ginger and then all the vegetables. Except for tomatoes. They will be going in at the vary end. You will know when the vegetables are done. The carrots will turn yellowish orange. Add the rice and tomatoes in and stir. Start off with 1 Tbsp. of soy sauce and mix the fried rice. You can add more soy sauce if you need to. Remember soy sauce is salty once you put it in the fried rice you can’t take it out.
